Fancy something different by way of chicken?

To make this wonderful and easy to handle and eat, chicken cushion, a chicken is carefully taken off the bone, then wrapped around sausage meat, surrounded by streaky bacon and then tied carefully to give a decorative ‘cushion’ shape.

Deliciously different and not just for the festive period!

How to cook:

Preheat the oven to 190°C/350°F/Gas Mark 4.

Place the Cushion in a roasting tin and cook for approximately an hour and 15 mins, basting if preferred. Cook for longer if required  The meat is cooked when, if it is pierced with a clean skewer, the juices run clear.

After cooking, remove from the oven and let it rest for 15 minutes before carving. Remember to remove the string before doing so!
